Wild Garlic Burgers

ingredients

700g beef mince

80g wild garlic leaves

1 tsp sea salt

1 tsp black pepper

50g oat biscuits, crushed

 

To serve:

6 bread buns

Salad leaves

2 tomatoes, thickly sliced

1 red onion, thinly sliced

Mayonnaise

instructions

Bring a large pot of water to the boil and immerse the wild garlic leaves. Leave to cook for 30-60 seconds or until slightly wilted then drain in a colander and leave to cool.

Once the leaves have cooled squeeze any excess water out and chop finely.

Place the minced beef, salt, pepper, crushed oat biscuits and chopped wild garlic in a large bowl and mix well with a wooden spoon or by hand. Wet your hands with cold water before forming the mixture into six equal sized patties. Place in the fridge to rest.

Heat a large frying pan on a high heat. Brush with a little oil and place the burgers in the pan. You may have to cook them in batches. Press down on the burger lightly using a spatula. Cook for 3-4 minutes on each side. Keep warm whilst you cook the remaining burgers.
