Matcha Christmas Tree Waffles

Serves 4-6

These waffles are tinted green with Matcha Powder. It’s green tea leaves that are finely ground and rich in antioxidants. There’s only a tablespoon of it in this waffle batter so there’s no bitter taste and very little caffeine. Serve with a bowl of berries and fruits like mango, kiwi or melon cut into different shapes and your little ones can ‘decorate’ their own trees. Drizzle with yogurt, honey or maple syrup.

150g plain flour

1 scant tsp Baking powder

1 tbsp matcha powder

1 egg

30g caster sugar

250ml milk

50g butter, melted

To serve: Mixed berries, fruit, honey, maple syrup, yogurt

Sieve the flour, baking powder and matcha into a medium sized bowl, stir through the sugar. Whisk the egg, milk and butter together. Pour the liquid into the dry and whisk till it forms a smooth batter. Don’t over beat. Cook the waffles according to the instructions on your waffle iron. These work as pancakes too. Cut the waffles into four and arrange in a tree shape, Serve with the berries. And if you use a heart-shaped waffle maker to make hearts, you may serve this as breakfast in bed for your special someone.
