1 tbsp olive oil
1 large onion, finely chopped
450g lamb mince
1 ½ tsp ground cumin
1 ½ tsp ground coriander
½ tsp cinnamon
½ tsp chilli powder
400g carrots, peeled
1 small bunch flat leaf parsley, finely chopped
1 small bunch mint, leaves picked & finely chopped
For the Tzatziki:
300g Greek yogurt
1-2 cloves garlic, crushed
1 tsp olive oil
Salt & Pepper
1 tbsp finely chopped mint or dill
Heat a frying pan over a medium high heat. Add the oil and onion, sauté until translucent.
Add the minced lamb breaking it up with a wooden spoon as you stir it into the onion.
Once the lamb begins to brown add the spices and stir to combine.
Whilst the lamb is cooking grate the carrots coarsely. Once the lamb is browned and cooked taste for seasoning adding salt and pepper as necessary. Stir in the carrots and herbs and serve immediately with toasted pitta breads, tzatziki and salad.
